For the meatballs
1 small
Red onion - peeled and finely sliced
1 tbsp
Olive oil

Slice of bread - lightly toasted and whizzed into breadcrumbs

Sundried tomatoes - finely chopped

Pork sausage meat

Egg - Beaten

For the sauce
1 small
Red pepper - de-seeded and roughly chopped
1 small
Yellow pepper - de-seeded and finely sliced

To assemble

1/2 tbsp
Red wine vinegar
1 tbsp
Worcestershire Sauce
400 g tin
Chopped tomatoes
1 pinch
1 pinch
1 tbsp
Tomato Puree
200 grams
1 whole
Mozzarella ball - torn
Tomato Sausage Meatball Bake
  1. To make the meatballs, gently fry the onions in the oil until soft and then blitz the onion in a blender with the tomato, sundried tomatoes and tomato puree. Stir together the onion mix, breadcrumbs, sausage meat, salt and pepper and the egg until well combined and the shape into meatballs the size of a Ping-Pong ball. Leave the meatballs to chill for at least 15 minutes so that they firm up a little.
  2. Preheat the oven to 180’C
  3. Put 1 tbsp oil into an oven proof dish, roll the meatballs in this and scatter on the peppers. Roast in the oven for 20 minutes
  4. In the meantime cook the pasta according to the pack instructions and make the sauce by frying the onion in the remaining oil until soft before adding the tomatoes, Worcestershire sauce, vinegar, puree, sugar and herbs and leaving to simmer over a low heat until the meatballs and peppers are cooked.
  5. Once all the elements are cooked, stir until well combined and then scatter the mozzarella on top. Bake in the oven for 20-25 minutes until the mozzarella has turned golden and crispy.
