Preheat the oven to 180’C
Mix the garlic with the olive oil and brush over the mushrooms (saving a little oil for frying the filling).
Bake in the oven for 15 minutes
Heat the remaining garlic oil in a pan and cook the onion until soft.
Add the leek to the pan and fry off for 2 minutes before stirring in the sausage – mashing it as it cooks.
Once the sausage has cooked through, mix it together with the pepper, oregano, egg and cream cheese.
Whiz the bread into breadcrumbs and stir this into the mixture.
Divide the mixture up between the mushrooms and then top with the parmesan cheese.
Return to the oven for 15-20 minutes and serve with a plate full of salad.
