For the fish

Red pepper - deseeded and finely chopped

Red onion - peeled and finely sliced

Halloumi

Garlic clove - peeled and finely chopped

Vegetable stock cube

Mint sauce

For the dressing
1 handful
Fresh Basil
3 Dessert spoon
Extra Virgin Olive Oil
1 whole
Lemon - Juice
3 Dessert spoon
Truffle oil
3 Dessert spoon
White wine vinegar
1 Dessert spoon
Honey
2 tsp
Natural yoghurt
Roasted Trout with Couscous Halloumi Salad, Roasted Tomatoes and a Basil Dressing
  1. Preheat the oven to 200’C
  2. Rub the trout with salt pepper and oil and place on a baking sheet. Top with the tomatoes and then bake in the oven for around 12-15 minutes – depending on the size/chunkiness
  3. While the fish is cooking, heat the oil in a large frying pan and fry the onion, pepper and courgette for 5-7 minutes until softened. Add the halloumi and the garlic and then fry off for another 5 minutes.
  4. In the meantime, place the dry couscous in a saucepan and sprinkle with the stock cube. Cook according to the pack instructions and then stir in the veg mix, mint sauce and season to taste
  5. Finally whiz together the ingredients for the salad dressing and when the fish is cooked plate up and enjoy.
