Avocado - peeled and sliced
1 medium
Red onion - peeled and finely sliced
1/2 whole
Lime - Juice
2 tbsp
200 g tin
Mixed Beans
1/2 medium
Courgette - peeled into long strips
1/2 whole
Lime - Juice
1 tsp
Fresh mint - finely chopped
2 tsp
Rice wine vinegar
125 grams
Halloumi - sliced
2 large

Halloumi, Mixed Bean and Avocado Wraps
  1. Mash the avocado in a bowl and stir in the chilli, half a lime juice and mayonnaise
  2. In another bowl, mix together the courgette ribbons, juice ½ lime, mixed beans, mint and rice wine vinegar
  3. Heat a griddle pan to a high temperature and cook the halloumi for a minute or two on each side, until chargrilled.
  4. Heat the wraps (according to the pack instructions) and then divide and spread the avocado mayo, top with the halloumi and finish off with the bean salad. Roll up the wrap, tucking the sides in as you go and enjoy. You may find that you don’t use all the bean salad, so toss this together with some mixed leaves and serve on the side – it is also quite nice just enjoyed with a fork!
