- For the topping
- 2 large
- Red onion - peeled and finely sliced

- For the topping
- 400 g tin
- Chopped tomatoes
- 1 tbsp
- Tomato Puree
- 1 tbsp
- Worcestershire Sauce
- 1 pinch
- Sugar
- 1 pinch
- Oregano
- 1 Twist
- Salt and pepper
- 2 Slices
- Pepperoni

In order to make the ultimate cheese on toast you really do need the ultimate cheese!!! – I used Bookham and Harrisons ‘Sussex Charmer Cheese‘ and it’s totally delicous. If you can’t get hold of it then opt for an extra mature cheddar instead…..
All great cheese on toast needs toppings and on this occasion I did the following:
- one simply with some Worcestershire Sauce
- another I added some blue cheese to the mix.
For an ultimate cheese on toast recipe, you may need to make a little extra effort, and so the recipes for the following toppings are below:
- Caramelised onions
- Pepperoni pizza toast
- To make the caramelised onions, pre-heat the butter and oil in a frying pan until bubbling. Add the onions and sweat until soft before adding the balsamic and the sugar. Simmer for 10-15 minutes until lovely and sticky and then season with salt and pepper. Add a heaped spoonful onto a piece of toast, top with the cheese and grill until golden and bubbling.
- To make the sauce for the pepperoni pizza toast, heat the oil in a saucepan and gently fry the garlic for 1 minute (being careful it doesn’t burn. Add the remaining ingredients, bring to the boil and then simmer for 15 minutes until thickened. When you’re ready to load up, spread 1-2 tbsp of the sauce on a slice of toast, top with the cheese and then tear up some pepperoni to finish (you want 2 slices of pepperoni per piece of toast). Grill until bubbling and golden.
