Chunky bread slices - cubed

For the salad
2 handful
Mixed leaves

Red peppers - griddled until black, skins washed off and torn into strips
1/4 whole
Cucumber - finely chopped

Carrot - Peeled and grated
400 g tin
Mixed Beans
120 g tin
Tuna
1/4 medium
Red onion - peeled and finely sliced

Feta cheese - crumbled

For the dressing
3 tbsp
White wine vinegar
6 tbsp
Extra Virgin Olive Oil
1 tsp
Wholegrain mustard
1 tsp
Honey
Tuna, Mixed Bean and Feta Cheese Salad with Chilli Croutons
  1. Pre-heat the oven to 200’C
  2. Toss the bread in the chilli oil and place in the oven for 5-7 minutes until crispy and golden. Remove from the oven and set aside while you prep the remaining salad
  3. Mix all the ingredients together for your salad and in an old jar shake up the ingredients for the dressing.
  4. Plate up the salad, throwing in the croutons and then drizzle over the dressing before devouring.
