King prawns
1 tbsp
Sweet chilli sauce
1 handful
Baby spinach
1 tbsp
Fresh coriander - roughly chopped

For the salsa
1 small
Red chilli - deseeded and finely chopped
1/2 small
Avocado - peeled and cut into small chunks
1/4 large
Lemon - Juice
1/2 tsp
Chilli sauce
1/2 small
Red onion - peeled and finely sliced
1 tsp
Tomato Puree
2 .
For the mayo
1/2 small
Avocado - mashed

This recipe would serve 2 as a starter or 1 as a pretty substantial lunch.

  1. Combine all the ingredients for the salsa.
  2. Mash together the ingredients for your avocado salsa and mayonnaise and set aside until needed.
  3. Heat a griddle pan to a high temperature
  4. Drizzle the prawns in chilli sauce and heat lay on the hot griddle pan for about 30 seconds. Season with some salt and flip them over to grill for on the other side for another 30 seconds.
  5. Layer your glass; first with the spinach, then the salsa, prawns and the Mayo. Sprinkle with the fresh coriander and enjoy :-D
