Heat your waffle machine until hot
Cook your 2 slices of bacon until crisp and whiz into crumbs. Combine all your ingredients for the waffles in a bowl until well combined
Spray the waffle iron with oil and then fill it so it is level with the potato mixture (depending on the size of your waffle machine you will get two large waffles or 3-4 smaller ones). Cook until crisp, which could take any time between 8-15 minutes, depending on your machine. In the meantime, it may be worth heating your oven to a medium-low temperature to keep your cooked waffles warm while you cook the others.
While your waffles are cooking, mix together your avocado, lime juice, coriander and season to taste.
Prep your eggs so they are ready to poach 5 minutes before your waffles are done and cook your bacon until crisp.
Once your waffles are cooked, divide between two plates, dollop and scoop of the avocado on top and then cover in the remaining toppings before devouring.
