Remove all the pumpkin guts from the seeds and wash them clean in a colander
Heat a saucepan with boiling water and then reduce to simmer before adding the seeds, covering, and cooking for ten minutes
Preheat the oven to 160’C
Dry the pumpkin seeds and toss in the remaining ingredients before spreading out on a baking tray.
Bake in the oven for ten minutes, remove and give the tray a good stir
Return to the oven for another ten minutes and repeat this process if necessary until the seeds are golden brown and easy to bite. All in all mine took 30 minutes in the oven.
