For the lamb
6 whole
Large kebab skewers
250 grams
Lamb mince
1 large
Carrot - peeled and finely chopped
1/2 medium
White onion - peeled and grated
1 whole
Garlic clove - peeled and finely chopped
25 grams
Fresh breadcrumbs
35 grams
Chestnut mushrooms - finely chopped
1 tsp
Tomato Puree
1/2 tsp
Chilli flakes
1/2 tbsp
Fresh coriander - roughly chopped
1 medium
Egg - Beaten
1 Twist
Salt and pepper

For the rice
3 handful
Rice
1/2 whole
Lime
1 handful
Fresh coriander - roughly chopped
1 handful
Fresh mint - finely chopped
1 handful
Rocket

For the sauce
1 medium
Red chilli - deseeded and finely chopped
1 whole
Garlic clove - peeled and finely chopped
1 tsp
Olive oil
1 pinch
Chilli flakes
1 tbsp
Sugar
1 tbsp
Tomato ketchup
4 tbsp
Water
1/2 whole
Lime - Juice

To serve
1 handful
Fresh mint - finely chopped
1 handful
Fresh coriander - roughly chopped
3 tbsp
Greek yoghurt
1/2 whole

Spicy Lamb & Carrot Kofta’s with a Mixed Herb Rice Salad, Minted Yoghurt and a Chilli & Garlic Sauce
  1. Place all the kofta ingredients together in a large bowl and mix together with your hands until well combined. Divide into 6 sausage shapes and push a skewer into the middle of each kofta. Cover with cling film and chill in fridge for 30 minutes.
  2. Set the oven to 180’C
  3. Place the koftas on a grill with a tray underneath and cook for 30-35 minutes until starting to turn crispy on the outside
  4. In the meantime, cook the rice according to pack instructions in boiling water with salt and half the lime. Once cooked, drain and discard the lime and stir in the herbs. Season to taste and set aside until ready to serve
  5. In the meantime make the chilli sauce by simmering the chilli and garlic on a medium heat in the oil until the garlic is just turning golden. Add the rest of the ingredients and simmer for 3-5 minutes. Remove from the heat and blend into a smooth sauce.
  6. Finely make the minted yoghurt by simply mixing together the fresh herbs, yoghurt and lime juice
  7. Plate rice and koftas and drizzle with the chilli and yoghurt sauce and enjoy
