Sweet potatoes - cut into wedges
1 tsp
Smoked paprika
1 tsp
Oregano
2 tbsp
Olive oil
1 Twist
Salt and pepper
2 handful
Mature cheddar cheese - grated

For the mayo
2 tbsp
Light mayonnaise
1 small
Garlic clove - peeled and finely chopped
1/2 whole
Lemon - Juice
2 tbsp
Creme fraiche
1 tbsp
Chives - finely chopped
Smoked Paprika Cheesy Sweet Potato Wedges with Garlic and Chive Mayo
  1. Pre-heat the oven to 200’C
  2. Toss the potatoes in the paprika, oregano and salt and pepper and then mix in the olive oil. Make sure the wedges are in an oven proof dish, skin side down and place in the oven and bake for 40-50 until cooked through with crispy edges.
  3. Once the potatoes are cooked, top with the cheese and place under a grill to melt
  4. Mix together all the ingredients for the garlic mayo and enjoy a good dunk!
