Piquante peppers - chopped

Black olives - sliced

Sundried tomatoes - finely chopped

Feta cheese - crumbled
1/2 tbsp

Salmon Fish Cakes Stuffed with a Mediterranean Feta, Olive and Sundried Tomato Filling
  1. Preheat the oven to 180’C
  2. Wrap the salmon in foil with the lemon slices and bake in the oven for 12 minutes
  3. Mash the potatoes and then flake in the cooked salmon, stir in the onion mix and add the oregano. Season with salt and pepper to taste
  4. Heat a frying pan with the oil and gently fry the onion until soft Add the courgette and fry off until all the moisture is removed from the pan
  5. Mix together the ingredients for the filling until well combined, divide into four and roll up into little balls.
  6. Divide the fish mixture into 4 and then set out four plates; one with the flour, the second with the egg, third the breadcrumbs and then finally a large clean one to set them on. Take one fish cake at a time and press your thumb into the centre to make a hole. Put the filling ball in the middle and seal around it with the fish mixture, making sure it is totally covered. Roll the fishcake first in the flour, then the egg and finally coat in the breadcrumbs (you may need to add more breadcrumbs to the plate as you go along). Repeat this process with each fish cake and shape each into a flattened ball. Chill in the fridge for 20 minutes
  7. Heat the oven up to 200’C
  8. Rub each fish cake in some olive oil and then bake in the oven for 30-40 minutes, until golden and crispy – alternatively you can cook these in a deep fat fryer if you have one.
  9. Serve with some fresh veggies or salad and enjoy.
