For the cauliflower
2 whole
Garlic clove - peeled and finely chopped
1 tsp
Smoked paprika
2 Sprig
Fresh Thyme
1 pinch
1 Splash
Olive oil
1/2 whole
Lemon - Juice & zest
2 tbsp

Mini cauliflower heads

For the tomatoes
300 grams
Cherry tomatoes
1 pinch
1 pinch
Mixed herbs
1 tbsp
Olive oil
Paprika & Thyme Roasted Mini Cauliflowers with Sweet Cherry Tomatoes
  1. Pre-heat the oven to 180’C
  2. Mix together all the garlic, paprika, thyme, salt, oil, lemon and honey and smother all over the cauliflower heads. Leave to marinade for 15 minutes
  3. Toss the tomatoes with the sugar, herbs and oil and set aside until ready to cook.
  4. Place the cauliflower heads in an oven proof dish and arrange the cherry tomatoes around them. Cover the dish with foil and bake for half an hour
  5. Remove the foil and then return to the oven for 10 minutes until lovely, golden and smelling delicious.
