1 large
Chicken carcass
1 large
White onion - peeled and roughly chopped
2 whole
Celery stalk - strings removed and finely chopped
1 large
Carrot - peeled and sliced
1 Bunch
Fresh Thyme
2 whole
Bay leaf
1 Twist
Salt and pepper
Homemade Chicken Stock
  1. Put all the ingredients in a large pan and cover with water. Bring to the boil and then cover and simmer on a low heat for 3 hours.
  2. Strain the liquid and pour into containers. This will freeze so you can use it when needed.
