For the salad
1/2 whole
Lime - Juice
1 large
Avocado - peeled and sliced
2 handful
Mixed leaves
1 large
Candystripe beetroot - peeled and finely sliced
150 grams
Good quality ham - sliced
1 tsp
Chives - finely chopped
1/4 whole
Cucumber - seeds discarded and finley sliced

For the dressing
4 tsp
Extra Virgin Olive Oil
2 tsp
White wine vinegar
1 tsp
Honey
1 tsp
Wholegrain mustard
Ham, Avocado and Candy Stripe Beetroot Salad with Honey Mustard Dressing
  1. Toss the avocado in the lime juice and set aside while you prep the rest of the salad
  2. Mix together all the salad vegetables and then divide between two plates. Top the salad with the avocado and the ham and sprinkle over the chives.
  3. Put all the ingredients for the dressing in a small jar and give it a good shake. Drizzle the dressing over the salad and enjoy
