Green chilli - de-seeded and finely chopped
1 Sprig
Lemon grass - trimmed and roughly chopped
1 tsp
Ground coriander
1 small
White onion - peeled and finely chopped
1/2 tsp
Shrimp paste
2 medium
Garlic clove - peeled and roughly chopped
7 grams
Fresh Basil
11 grams
Fresh coriander - roughly chopped
2 whole
Garlic clove - peeled and roughly chopped
1 thumbsize
Ginger - peeled and grated
1 whole
Lime - zest and juice
1 tsp
3 tbsp
Fish sauce
1 pinch
Chilli flakes
Green Thai Curry Paste
  1. Combine all the above ingredients and whizz into a paste in a blender or with a stick blender.
  2. This should keep in the fridge for about a week.
