Maris piper potatoes
1 Splash
Corn oil
1 medium
Chilli - de-seeded and finely chopped
1 large
Garlic clove - peeled and finely chopped
1 Twist
Salt
2 tbsp
Mayo
1/2 whole
Lime - Juice
1 tsp
Chilli flakes
Garlic and Chilli Chips with Chilli and Lime Mayonnaise
  1. Heat the oven to 180’C
  2. Heat ½cm corn oil on a high heat in a frying pan. Fry the chips until golden brown
  3. Add the garlic and chilli and transfer the pan to the oven. Bake for 10 minutes, remove and transfer to a board and brush off the bits of garlic and chilli (obviously when the chips have cooled slightly)
  4. To make the mayo simply mix together the mayo, lime and chilli flakes and use to dip the chips into it.
