500 grams
New potatoes
2 Dessert spoon
Light mayonnaise
1 tsp
Curry powder
1 tsp
Mango chutney
1 Small handful
Toasted almonds
1 Small handful
Fresh coriander - roughly chopped
Coronation Potato Salad
  1. Boil the potatoes in a pan of salted water for 15 minutes
  2. Mix together the mayo, curry powder and chutney
  3. Once cooked, drain and dry off the potatoes by putting back over a very low heat to let off the steam. Allow to cool and then stir in curried mayo and almonds. Season to taste and top with chopped coriander.
