Pre-heat the oven to 150’C
Heat the oil in a large, heavy based casserole pot and fry off the game until brown.
Remove from the pan, toss together with the flour and set aside.
In the same pan, fry the onion until softened and then add the remaining vegetables.
Fry off for 10 minutes, stirring regularly, and then return the game to the pan, along with the remaining ingredients (except the filo sheets).
Give the mixture a good stir and once bubbling away put the lid on a place in the oven to cook for 1-2 hours, until the game is lovely and tender.
Once cooked, divide the mixture between two individual pie dishes and leave to cool for 10 minutes.
Take one sheet of pastry and slice it in half so you have two squares. Lay this on top of the pie mixture, scrunching up and edges. Brush this with a little oil and then place the second square on top. Brush this with a little more oil and the scrunch the pastry up so its rough.
Repeat this process with the second pie and then place in the oven to bake for 20-25 minutes, until the pastry is golden and crisp on top.
Serve with some seasonal vegetables and enjoy!
