For the fish
2 large
Cod fillet
1/2 tsp
1 thumbsize
Ginger - peeled and grated
1 medium
Satsuma - zest
1 medium
Lemon - Zest
1 1/2 tbsp
Light soy sauce
1 tbsp
Sesame oil

Lemon - Juice
1 medium
Satsuma - juice

Spring onion - finely chopped

For the veg
1 tbsp
Sesame oil
8 small
Asparagus stalks - roughly chopped
8 whole
Mini corn - sliced
1 small
Red chilli - deseeded and finely chopped
1 handful
Sugarsnap peas
1 handful
Mange tout
1/2 medium
Yellow pepper - de-seeded and finely sliced
300 grams
Medium cooked noodles
Citrus Ginger Steamed Cod with Stir Fried Noodles
  1. Pat the fish dry with kitchen paper Mix together the salt, zest and ginger and cover the fish with it – leave to marinate for 10 minutes
  2. Set up a steamer and place the cod on a heat proof plate that will fit in your steamer. Steam the fish for 5-7 minutes, until cooked through
  3. In the meantime, heat the oil in a large wok and toss together the vegetables and chilli and fry off for 5 minutes. Add the noodles, give it a good stir and heat through for a couple of minutes.
  4. While that is heating up, mix together the soy sauce, sesame oil and fruit juices until well combined.
  5. Plate up the noodles, top with the fish and drizzle over the dressing.
