Chicken breasts - cubed
1 medium
Garlic clove - peeled and finely chopped
1 thumbsize
Ginger - peeled and grated
1 whole
Lemon - Juice
1 whole
Lime - Juice
1 tbsp
Fresh Thyme
1 tbsp
Fresh marjoram - finely chopped
1 tbsp
Fresh tarragon - leaves picked and finely chopped
8 whole
Large kebab skewers
1 large
Courgette - cut into chunks
1 large
Red onion - peeled and quartered
Citrus Barbecue Chicken Kebabs

If you find that you have any leftover chicken from your barbecue, or are looking for ways to service it, then try out this delicious wrap combo:

  • Leftover barbecue chicken
  • Homemade coleslaw
  • Wraps
  • Feta cheese – crumbled
  • Mixed salad leaves
  1. Mix together the chicken, garlic, ginger, citrus juice and herbs and leave to marinate for an hour or so
  2. Thread the chicken, courgette and onion onto your kebab skewers. Cook on a barbecue or grill until lovely and golden and cooked through
  3. Serve with heaps of yummy salad (and the odd burger)
