Red onion - peeled and roughly chopped
100 grams
Carrot - peeled and finely chopped
1 medium
Garlic clove - peeled and finely chopped
1 tsp
Coriander seeds
230 grams
Cauliflower florrets
1 Pint
Vegetable stock
1 Twist
Salt
Carrot, Cauliflower and Coriander Soup
  1. Heat the olive oil in a pan, add the onion and carrot and fry for 4-5 minutes. Add the garlic and coriander seeds and fry for one minute.
  2. Add the cauliflower florets, stock and then season with salt and freshly ground black pepper, to taste. Simmer until the cauliflower is tender.
  3. Blend the soup with a hand blender. Once smooth, reheat over a medium heat if needs be.
