Mix all the dry ingredients together and rub all over the pork joint, cover in cling film and leave to marinate in the fridge for at least 2 hours but ideally over night
Heat the oven to 130’c
Remove the pork from the fridge and place in a roasting tin, skin side up. Pour over 100ml of water and wrap the dish in cling film, making sure all the edges are sealed.
Put in the oven and cook for 5 hours
Remove and leave to stand (still covered) for 20minutes
Remove the foil and the fat, turn the joint over and if the place under the grill so that the rub blackens and goes hard.
Place on a chopping board or serving plate and just pull the meat apart with your hands and serve with crusty bread and salad.
Save the juices as these can be used in casseroles or other dishes made up of the leftovers.
