Chopped tomatoes

Tomato Puree
1 tsp
Worcestershire Sauce
1 tsp
Caster sugar
1 large
1 handful
Mature cheddar cheese - grated
Best Brunch – Grilled Eggs and Tomatoes
  1. In a frying pan, fry the onions and pepper in a little olive oil for 5 minutes until golden and soft. Add the garlic and brown for 1 minute.
  2. Pour into the pan the tomatoes, puree, Worcester sauce and sugar and simmer for 5 minutes until the sauce has thickened
  3. Make a hole in the middle of the pan and crack an egg into it. Once the whole of the egg has started to turn white at the bottom remove from the heat, top with grated cheese and place under the grill. - It should only take a couple of minutes so keep your eye on it and once the whole of the white is cooked it is ready to eat.
  4. Serve on top of toast, with some great dipping bread, or simply on its own.
