Sweet Potato and Smokey Bacon Waffles Topped with Crispy Bacon, Avocado, Feta and a Poached Egg

So, Spring is officially here (although it may not feel like it), and to celebrate the occasion I figured I should share a recipe that is bright and colourful, in the hope that the weather follows suit!

I don’t know about you, but I cannot wait for an actual warm, Spring day, and with the clocks changing at the weekend we will hopefully see a big difference in our evenings too (I’m also excited for a bit more natural light for snapping my food pics)!

Although this recipe isn’t particularly ‘seasonal’ in the produce it uses, it is certainly a ‘happy’ dish, and one that will brighten up your day – I mean, who doesn’t get excited for waffles!

This was actually the first time I’ve ever made waffles, and contrary to their more common sweet variety, I had to kick off my new-found waffle craze with a savoury version, and have since been experimenting with some other delicious varieties. Watch this space for more to come on the waffling front (and I’m not just talking about my chat)!

 

Serves 2

For the waffles

  • 2 slices smoked bacon – cooked and whizzed into small pieces
  • 400g sweet potato – spiralised
  • 2 eggs – beaten
  • Salt and pepper
  • 4 spring onions – finely chopped

For the toppings

  • 1 avocado
  • Juice ½ lime
  • 1 Handful fresh coriander – chopped
  • Twist of salt and pepper
  • 2 eggs – poached
  • 2 rashes bacon – cooked until crispy
  • Pinch freshly chopped coriander
  • 50g feta cheese – crumbled
  • Mixed leaves

Heat your waffle machine until hot

Combine all your ingredients for the waffles in a bowl until well combined

Spray the waffle iron with oil and then fill it so it is level with the potato mixture (depending on the size of your waffle machine you will get two large waffles or 3-4 smaller ones). Cook until crisp, which could take any time between 8-15 minutes, depending on your machine. In the meantime, it may be worth heating your oven to a medium-low temperature to keep your cooked waffles warm while you cook the others.

While your waffles are cooking, mix together your avocado, lime juice, coriander and season to taste.

Prep your eggs so they are ready to poach 5 minutes before your waffles are done and cook your bacon until crisp.

Once your waffles are cooked, divide between two plates, dollop and scoop of the avocado on top and then cover in the remaining toppings before devouring.
