Chunky Apple & Honey BBQ Sauce

This in one of those great ingredients that just adds something awesome to so many dishes. In the summer (or even now if you want to brave the outdoors) it will make a great sticky marinate to some chicken drumsticks for the barbecue, be a fantastic topping on a homemade burger (less risk of eating horse if it’s homemade), or go fantastically in a pulled pork baguette. I however used it for something different altogether and had it with steak; and tonight I shall be using it to make yesterday’s leftover chicken into some quesadilla’s, so please stay tuned for these recipes in future blogs.

–          1 clove minced garlic

–          ½ red onion – sliced

–          10 cherry tomatoes

–          1 apple – finely chopped

–          3 tbsp Worcester sauce

–          3 tbsp ketchup

–          1 tbsp honey

–          1/2 tbsp wholegrain mustard

–          Pinch oregano

–          ½ tsp paprika

–          Pinch cinnamon

–          Pinch salt

–          Ground black pepper

–          Pinch ground ginger

–          1 tbsp dark brown sugar

In a saucepan fry the onions in a little olive oil for 5-7 minutes until soft.

Add the garlic, tomatoes and apple and fry off again for another 5-7 minutes until the apple has softened.

Add the remaining ingredients, stir so it is well combined, bring to the boil and then reduce the heat and simmer for 10 minutes.
