Now then, no one simply has burgers on their barbeque, and we are no exception. I also made these sticky garlic, lemon and herb chicken skewers. Homemade kebabs are an essential item to any barbeque and offer something a bit different and leaner to your usual sausages and burgers. If you fancy making them go further, simply cut the chicken strips into more chunks and mix them on a kebab stick with some chunks of onions, peppers, courgettes and mushrooms. You will end up with more kebabs at a fraction of the price and your guests will still love it!
– 2 chicken breasts, cut onto 3 strips each
– Juice and rind of ½ lemon
– 1 tsp wholegrain mustard
– 2 garlic cloves, minced
– 2 tsp honey
– Selection of fresh herbs, I used thyme and oregano
Makes 6 skewers
Combine all the above ingredients and marinate the chicken in it, so it is well covered. Chill in the fridge for at least an hour.
Cook on a BBQ or griddle and use a twig of rosemary as a brush to top up with marinade as it cooks to keep it moist.
Serve with the rest of your barbequed meats and salads or do what I did and served in a wrap with fresh vegetables and a tomato rice salad.
